Happy Thanksgiving!

// November 27th, 2003 // No Comments » // tagged:

We drove down to my parents house yesterday after work and will be heading to my grandparents for our Thanksgiving meal around 12:00 today. My beautiful little niece will be there ... she's 11 months old now and is going to be walking before Christmas. It's unreal how fast babies grow! It seems like just yesterday that we were all at the hospital when she was born and was only 5 lbs. Wow. Well I better go grab a shower and get ready .... hopefully my Pumpkin Roll and Maple-Pumpkin Cheesecake will be a yummy addition to the meal today. Hope everyone has a great holiday weekend! Happy Thanksgiving!

Letterman’s Top 10 Drawbacks to Working in a Cubicle

// November 25th, 2003 // No Comments » // tagged:

10. Being told to "think outside the box" when you're in a freakin' box all day long. 9. Not being able to check e-mail attachments without turning around to see who's behind you. 8. Cubicle walls do not offer much protection from any kind of gun fire. 7. That nagging feeling that if you press the right button, you'll get a piece of cheese. 6. Lack of roof rafters for the noose. 5. The walls are too close together for the hammock to work right. 4. 23 power cords - 1 outlet. 3. Prison cells are not only bigger, they also have beds and toliets. 2. The carpet has been there since 1976 and shows more signs of life than your coworkers. And the number 1 drawback to working in a cubicle is... 1. You can't walk out and slam the door when you quit!

Pumpkin Roll

// November 21st, 2003 // No Comments » // tagged:

It's that time of year again. I'm going shopping this afternoon to get all the ingredients for my annual Thanksgiving dishes. That's a nice thing about having a fairly large family :grouphug: -- you don't ever have to cook a LOT of food for the holidays. A different section of the family does the turkey every year and everyone else brings vegetables, desserts, breads and drinks. For the past 4 years, I've had desserts because everyone has loved this Pumpkin Roll recipe. (I try to add a different dessert to go with it every year -- this year I'm making a Maple Pumpkin Cheesecake. If it turns out well, I'll post that recipe after turkey day!!) So I'm off to the store to get the ingredients I don't already have! :bigthumb: It's a beautiful dessert, and it tastes great too! I've made it for four years in a row now, and it's turned out great each time. So I figure if I can make it and not screw it up ... anyone can. PUMPKIN ROLL
Ingredients

For Roll For Filling
3 eggs 1 cup confectioners' sugar
1 cup white sugar 1 (8 ounce) package cream cheese
2/3 cup solid pack pumpkin puree 1/2 teaspoon vanilla extract
1 teaspoon lemon juice 4 tablespoons butter
3/4 cup all-purpose flour
2 teaspoons ground cinnamon confectioners' sugar for dusting
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon ground ginger
1 cup chopped pecans

Directions 1. Preheat oven to 350 degrees F. Grease and flour a 10x15 inch jellyroll pan. 2. In a large bowl, beat eggs and sugar with an electric mixer on high speed for 5 minutes. Gradually mix in pumpkin and lemon juice. Combine the flour, baking powder, salt, cinnamon, and ginger; stir into the pumpkin mixture. Spread batter evenly into the prepared pan. Sprinkle pecans over the top of the batter and press lightly into the batter. 3. Bake for 12 to 15 minutes, or until the center springs back when touched. Loosen edges with a knife. Turn out on two dishtowels that have been dusted with confectioners' sugar. Roll up cake using towels, and let cool for about 20 minutes. 4. Now it's time to make the filling! With an electric mixer, combine cream cheese, butter, 1 cup confectioners' sugar, and vanilla. Beat until smooth. 5. Unroll pumpkin cake when cool, spread with filling (All of the filling will ooze out towards the sides -- so don't spread too much filling near the edges.) Now, carefully roll it up. Place pumpkin roll on a long sheet of waxed paper, and dust with confectioners' sugar. 6. Wrap cake in waxed paper, and twist ends of waxed paper like a candy wrapper. Refrigerate overnight. Serve chilled; (For a little extra "prettiness", lightly dust the roll with more confectioners sugar). Approximately 15 servings.

What You Didn’t Know

:sevenonsunday: Seven things people might not know about you ... 1. I play the piano and flute. I'm a somewhat accomplished classical pianist, but haven't played anywhere other than home for several years. I was in band all through school, and enjoyed having the smallest instrument in the marching band -- the piccolo! 2. My first name, Lacy, is my mother's maiden name. My middle name, Marie, is also my mom's, grandmother's, great-grandmothers and so-on's middle name. Anyone want to guess what my first daughter's middle name will be? I love it that my parents made my name be special and mean something in our family. 3. I talk in my sleep when I'm really tired. Sometimes I even sing. (My husband usually informs me the next day of my my nighttime repertoire :sing: ) 4. I originally met my husband online! We developed a strong friendship and exchanged emails and letters for almost four years before we met in person. Two years later I walked down the aisle and married him - my best friend and soulmate :heartbeat: 5. I had an ovarian cyst the size of an apple removed from my left ovary almost two years ago. (Wow. 2 years. Time really flies -- I can't believe it's been that long!) 6. Every day I wear my wedding rings on my left hand, a sapphire ring my grandmothers gave me for graduation on my right hand, a ruby pendant necklace from Steve, my watch and two earrings in each ear (usually a gold hoop in the first, and little diamonds in the second.) 7. I was born 4 minutes after my mother arrived at the hospital. My dad didn't even make it up from the parking garage in time for my arrival! My parents have always said I was in a hurry then, and I haven't stopped since :bounce: :mondaymission: 1. I read an article that said the reason many people like hot and spicy food is because that pain actually causes them pleasure. Do personally find a connection between pleasure and pain? Ah not really. 2. On the local NPR station their was a news item that about a recent study which said men who do housework get more sex. What do you think about that? Why would that be the case? Probably true. I know if my husband helps me out with housework, I'm in a better mood. And that's always a good thing for him! 3. A friend and I were talking about the stigma attatched to divorce. He said that men can usually be divorced and not have much social backlash, but that women are often looked at as having failed in some way. The church especially, he said, tended to look down upon divorced women as if it were totally their fault and not the man's. Do you think there is a double-standard when it comes to men and women and the stigma of divorce? I think divorce is usually the result of TWO people who cannot get past their problems. I would think it would only be a small percentage of people who could honestly place the blame ENTIRELY on one half of the couple. 4. On that same topic, I just read an article (look on Google News) that said parents with daughters are more likely to divorce than parents with sons. Do you think there is any validity to this? I don't think so. Although isn't it true that couples with children are less likely to divorce than childless couples? 5. Do you think the way a Father raises his daughter has an impact on the type of men she will eventually have relationships with? Most definitely. Although it might have more to do with how your dad treats your mom -- that has a great impact on the type of relationships you eventually have. 6. Have you ever found your body craving some sort of food? Meat, chocolate, fruit and even water, the body tends to know what it needs. Do you get food cravings? Which are the most powerful? I have a major sweet tooth. I crave galaxy chocolate quite frequently, and unfortunately, can't get it anywhere in the states. We bring back lots of it whenever we visit Steve's family ... but it just never lasts long enough! 7. Do you have any type of skills you can "fall back on" if you needed to change careers suddenly? I could go back to working at a hospital. And while I absolutely loved working in surgery ... it would be soooo stressful to return to that lifestyle. And it is a lifestyle. Being on call, regularly working 70+ hours a week .... whew. Let's hope I don't need to change careers suddenly!

Todays' funny: What a great comic!!! :pi: Ok, so I think I've discovered two design flaws in the Dell Optiplex GX240 model. We have approximately 35 of those machines running here on the network, and at least once a week I'm having to fix someone's CD drive. Why, you might ask? First problem -- They unplug themselves. I know, it sounds impossible. But I can't count how many times one of the users has called me to say their CD drive has disappeared. I go, open up their mini-tower and sure enough the plug is just kinda laying off to the side. The first few times it happened, Dell actually sent us a replacement CD drive. But it kept on happening. I think they just haven't designed the junction tightly enough. These aren't like full-CD drives anyway with the separate cables -- everything runs through one connector and it's less than an inch long. Sacrificing secure connections isn't a good idea just to keep everything smaller for the mini-tower workstation. Second problem with the CD drive is that CD's often "disappear" inside them. You have to open up the computer, pop out the CD drive, and the CD is trapped between the drive and the side of the computer. It's bizarre. Again, I bet I do this for a user at least once a week. :pc: This adds up to quite a bit of time fixing something that shouldn't even be a problem in the first place. I'm trying to get in contact with our Dell representative to see if they can remedy the situation somehow (maybe give me 35 brand new machines!! I know. I'm dreaming!!). Thank goodness we have nice full-size Dell's at home where all the parts are the right size and haven't been downsized to fit a teeny tower. I :heartbeat: my dell.

So Let’s Talk TV ….

// November 10th, 2003 // No Comments » // tagged:

:sevenonsunday: 1. What TV show is currently your favorite? Alias! (I second Addie's vote that Lauren must die!!) 2. Have you started watching any of the new shows this season? The Brotherhood of Poland, NH; 3. Any shows which you're surprised are still on the air? Geez yeah. Boston Public, The Practice, and most of the reality shows. I thought they would be a "fad" -- here one or two seasons and then gone thankfully. But they're sticking around and they're as lame as ever. 4. Any shows which you're surprised to have been cancelled? John Doe, The Agency 5. Are there any new shows that you're watching simply because of one actor/actress? I started watching The Brotherhood of Poland, NH because of Randy Quaid ... 6. Have you tuned into anything this season that you've never watched before but that has been around for a bit? CSI: Miami ... I'd only watched CSI. I don't know if I really like the Miami version though. The jury is still out. I started watching The Dead Zone this summer, and really like it. 7. Of all shows that you watch, are there any that have ended recently, or will end soon that you can't imagine your TV line up without? Buffy, of course (although I'm hoping for a cameo or two on Angel); Friends (Ross and Rachel better end up together), Sex & The City (Will Big and Carrie ride off into the sunset together???).

Deadlines …. I’m Tired

// November 6th, 2003 // 2 Comments » // tagged:

:sick: I just haven't felt very bloggy this week. I think maybe I'm coming down with something because I've been going to bed every night this week at like 9:30 (and it's usually 10:30 or 11:00) and I still feel tired the next morning. I'm getting like 9 hours sleep and I'm still tired? Who knows. I'm ready for the weekend though. I've been finishing up an email-newsletter for a client this week ... and it was very frustrating. Our deadline was actually October 31, but on Monday, November 3, I still didn't have articles or graphics from several people. I guess we are going to have to move up the deadline for content in order to actually get it in on time. I don't understand people who have a date for completion, and then just totally disregard it. If someone tells me to have something done by November 5, then usually I'll have it done before that date, or at the very least it will be done on that day. If for some reason I couldn't get it done, I'd probably also let someone know. Not just pretend the deadline didn't exist in the first place. :headache: Oh well. We got it finished, and hopefully next time everything will go much smoother. Alias. I wasn't expecting Francie/Alyson to still be alive. Didn't like her scenes with Sark - because I've never really seen Sark as someone who really wanted to harm Sydney. He always seemed to me to be the kind of bad guy who just did whatever could make him money .... he wasn't in it to 'destroy the world' or whatever. It will be interesting to see how he reacts to his eventual learning that Sydney is the one who killed his dad. Will he care that she wasn't "herself" when it happened? Does it really matter if he cares or not because the writers aren't ever going to have a Sydney/Sark pairing anyway?? Are we ever going to get to see Irina? And maybe even some Irina/Jack scenes? :heartbeat:
